Taste, color: Thyme honey, not as strong as heather honey or chestnut honey, however, it is stronger than lavender honey or acacia honey. Its color is cream brown .

Harvest area: It is produced in the southern Ardeche and northern Gard (south of France).

Common thyme is a perennial sub-shrub, persistent 10-30 cm. Its crooked stems, woody, grayish branches, small elliptical leaves gray-green velvet. Its pink or white flowers appear from May to October.

Originally from the western Mediterranean; it is found in abundance in all the South of France, on the arid hills, where its always green tufts embalm the sun.

Widely used in cooking, it is also popular as a tea. Its essential oil is used in disinfectants, toothpaste, perfumes, toiletries and liquors.
